Red Still

This ruby red Merlot offers inviting aromas of blueberry and a hint of vanilla, leading to a smooth, velvety palate. The wine’s ripe dark fruit character is balanced by subtle spice notes from its oak maturation, with soft tannins providing structure and elegance. It’s a well-rounded and approachable wine with a long, harmonious finish.

15% ABV (Alcohol by Volume)

Grown at around 150m above sea level on lime-rich clay-stone soils in the Colli Berici hills, located between Verona and Vicenza, the Merlot grapes are trained using the Low Spur Cordon method.

Harvested in late September, fermentation takes place in steel vats for two weeks at a controlled temperature of 26-32°C. The wine matures for 18 months in French oak barriques, followed by 5 months in the bottle before release.

Ideal with roast dinners, this Merlot complements the rich flavours of beef and pork, as well as game meats. It also pairs beautifully with poultry and traditional British pies, making it a versatile choice for a variety of hearty dishes.
