The durella grapes are hand picked with the utmost care in the early days of September. Through a meticulous process, the grapes are gently cold-pressed and the precious most quickly separated from the skins. The journey continues with a primary fermentation in steel vats, followed by a second, in-bottle fermentation, where the wine's natural yeasts work their magic. This method allows the wine to age gracefully for a minimum of 36 months, resulting in a sparkling delight that embodies tradition and terroir.
