Tasting Notes

Subtle traces of white blossoms, zesty orange peel, velvety vanilla, and the presence of dried fruits and honey are evident. The wine's bouquet signifies a sophisticated mineral characteristic, reflective of its terroir. On the palate, a noticeable freshness is complemented by a pronounced mineral aspect, along with a hint of fruitiness. This wine exhibits a complex profile with a sustained finish.

Alcohol Content

12.5% ABV (Alcohol by Volume).

Production Method & Ageing

A traditional method sparkling wine.
The Durella grapes are hand-harvested in September and gently pressed at a controlled temperature of 10° to 12° C.
First fermentation occurs in temperature-controlled steal tanks (15° to 18° C), followed by a second, in bottle fermentation (May) on the new wine's natural yeasts. The wine is then left to mature for a minimum of 50 months.
Manual "remuage" for 30 days before the bottles are disgorged to remove sediment. No sugar dosage added.

As an aperitif served with a Parma ham or cheese. Very good when combined with sea food or seafood pasta dishes.
