A traditional method sparkling wine.
The Durella grapes are hand-harvested in September and gently pressed at a controlled temperature of 10° to 12° C.
First fermentation occurs in temperature-controlled steal tanks (15° to 18° C), followed by a second, in bottle fermentation (May) on the new wine's natural yeasts. The wine is then left to mature for a minimum of 50 months.
Manual "remuage" for 30 days before the bottles are disgorged to remove sediment. No sugar dosage added.
