Production Method & Ageing

Cold stabilization at 0 degrees for 30 days precedes controlled-temperature fermentation using natural yeasts in stainless steel tanks. Following this, the wine undergoes a 10-month refinement period with regular batonnage, all while remaining in contact with its own yeasts.
